Geraldine’s Mince Pie Recipe!

Buy Geraldine’s home-made mince meat (made using Cosgrove’s quality Christmas fruit) and follow the simple recipe below to create the most scrumptious mince pies this Christmas!!

Geraldine’s Christmas Mince Pies

  1. Preheat oven to 180C (Fan oven)
  2. Grease pie tin with soft/ melted butter (grease full tin, including top surface)
  3. Sprinkle tin all over with flour to stop mince pie meat sticking to tin
  4. Roll out your pre-prepared pastry on a floured work surface (1/8” thick)
  5. Making 12 a time, cut out 12 base circles with the large cutter
  6. Smooth bases into the tin
  7. Fill with a heaped teaspoon of mince-meat and flatten with the back of the spoon (don’t over fill to avoid mince-meat spilling out during cooking)
  8. Cut out 12 mince pie tops with the smaller cutter
  9. Place tops on the mince pies and press in firmly
  10. Brush the top of the mince pies with a beaten egg
  11. Bake in the oven for 12-14 minutes until pale golden
  12. Remove from the oven
  13. If you have any spilled over mince-meat, scrap or wipe away
  14. Leave to cool in the tin for 6 minutes
  15. Gently twist in the tin and remove to place on a wire rack
  16. When completely cool, sprinkle with icing sugar
