Sherry vinegar is one of the most distinctive tastes in Spanish cooking. A new addition to Cosgrove’s shelves, Valdespino sherry vinegar is from the family-owned bodega in Jerez, Spain and is dry and aromatic on the nose and to taste. This sherry vinegar is made using the traditional ‘solera’ method resulting in a rich, nutty and complex flavour. Valdespino is one of the oldest bodegas in Jerez, with production dating back to the 13th century. In 1264, Alfonso Valdespino was one of 24 knights who fought for the city of Jerez alongside King Alfonso X against the Moors. As a reward for his loyalty, Alfonso was given land which laid the foundation for a much-loved winery, still producing high-quality products to this day
